Recipes with Lucuma

NO-BAKE
PUMPKIN LUCUMA CHEESECAKE



INGREDIENTS:
  • 1 cup cooked pumpkin puree
  • 1 cup cashews
  • 1/2 cup water
  • 6 tablespoons maple syrup
  • 4 tablespoons Superu Lucuma Powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 4-8 drops stevia
  • 1/2 cup + 2 tablespoons melted coconut oil
  • 5 teaspoons melted cacao butter
  • 1 prepared pie crust (preferably whole grain and dairy-free)

DIRECTIONS:
  1. Blend all but the coconut oil and cacao butter butter in a high speed blender until smooth.
  2. Add these last two ingredients. Blend to combine.
  3. Pour the mixture over the pie crust.
  4. Chill in the fridge or freezer until firm (at least 8 hours in the fridge).

BLUE LUCUMA SMOOTHIE



INGREDIENTS:
  • 1 cup blueberries
  • 1 tablespoon Superu Lucuma Powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon Superu Maca Powder
  • 1 teaspoon almond butter
  • 1 date, chopped
  • Pinch of cinnamon
  • Water from one whole coconut (or a big glass of packaged coconut water)

DIRECTIONS:
Blend all of the ingredients together at once until smooth.
